It allows you to control the food you put into your body, connect with your family and friends over a home cooked meal, and save the money you might otherwise spend in restaurants or on processed, prepackaged foods. Believe it or not, making simple and satisfying meals from scratch doesnt have to be hard. Here are some of my favorite easy, healthy recipes. 1 tablespoon olive oil
1/2 small onion, thinly sliced
2 sliced smoked salmon
1/4 avocado, diced
Salt and pepper to taste
Beat eggs in a small bowl.
Heat oil in a frying pan.
Add onion and sauté for 5 minutes.
Add eggs, turn heat to low and cook for 3-5 minutes until eggs are mostly cooked.
Distribute salmon and avocado evenly across the eggs.
Use a spatula to fold the omelet in half and cook 30 seconds on each side.
